The Shun Kanso 7" Santoku is the asian answer to the traditional chef's knife.  The flatter belly makes it a perfect blade for slicing vegetables and processing fish and poultry.  The hollow ground edge helps starchy foods to slide off the blade easier.  The santoku is especially good for down and forward cuts.  

Shun Kanso is a design that is new from SHUN. Kanso means "Simplicity" in Japanese. The Kanso line has been brought down to the basics of what a knife should be. High quality steel with a comfortable function and form.
