The Kanso Asian utility knife is very similar to the traditional Nakiri asian vegetable cleaver.  This knife has a long flat blade and sharp tip that is perfect for processing large quantities of vegetables and thinly sliced meats for stir fry.  The longer flat blade is perfect for crushing garlic or scooping up what you have just cut.  This will quickly become the favorite knife of any kitchen.
